A calorie is not just a calorie to me when…I can’t tell if I am full with this food. It dissolves instantaneously in my saliva – like those 20 calorie puffed discs and rice cakes, and of course, any white starch with any combination of fat, salt or sugar. The food leaves my stomach as quickly as it arrives and blood sugar follows suit. Carbs exit your stomach much faster than proteins or fats, which take much longer to digest. The carbs leave first, causing an initial spike in blood sugar followed by a plummet – followed by cravings. You can spend the entire day on a merry-go-round, chasing sugar cravings and trying to restablize blood sugar.
