A calorie is not just a calorie to me when…this food tells my body to store fat. Foods that elevate insulin levels, put me in fat storage mode. Carbs and proteins raise insulin, with carbs raising it the most. The faster that carb can become sugar (i.e. when it has less fiber, or when eaten alone), and the more carb dense the food (pasta vs. broccoli), the more insulin is raised. Interestingly, the only food that doesn’t raise insulin is fat.
