A calorie is not a calorie to me when…this food tells my brain to tell me to eat more. Eating foods that quickly turn to sugar (whether obviously sugar choices like cookies, or the more subtle choices like pasta, cereal and white rice) – through a complex pathway of biochemical reactions – ultimately results in the production of more serotonin, a feel good neurotransmitter. Unfortunately, if there is no significant protein, fat, or fiber there at the same time, the blood sugar is likely to spike and then drop lower than it even was originally, leaving me feeling the need for more.
